1 tablespoon olive oil

1 tablespoon butter

1 medium yellow onion, chopped

2 celery stalks, chopped

1 red bell pepper, chopped

3 medium carrots, chopped

4 garlic cloves, minced

1 jalapeño, finely chopped (seeds removed for less heat)

1 tablespoon dried oregano

2 teaspoons ground coriander

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

2 (15 oz) cans fire-roasted diced tomatoes

6 cups low-sodium chicken broth

1 (4 oz) can green chilies, undrained

½ cup chopped fresh cilantro

2 teaspoons brown sugar

1 teaspoon kosher salt (or to taste)

½ teaspoon ground black pepper

6 small corn tortillas, chopped

34 cups shredded rotisserie or leftover chicken

2 (11 oz) cans sweet corn (or 4 fresh corn cobs, kernels removed)


Instructions

Heat olive oil and butter in a large pot over medium heat. Add onion, celery, bell pepper, and carrots. Sauté for 4-5 minutes until softened.

Stir in garlic, jalapeño, oregano, coriander, cumin, smoked paprika, and chili powder. Cook for 1 minute until fragrant.

Add fire-roasted tomatoes, chicken broth, green chilies, brown sugar, salt, and black pepper. Bring to a boil.

Stir in the chopped corn tortillas. Reduce heat and simmer for 20-25 minutes until vegetables are tender and tortillas dissolve.

Blend the soup with an immersion blender until mostly smooth (optional).

Add shredded chicken, corn, and fresh cilantro. Simmer for 3-5 minutes until heated through. Adjust seasoning if needed.

Serve hot with crispy tortilla strips, lime wedges, and your favorite toppings.

Notes

Storage: Refrigerate leftovers in an airtight container for up to 4 days.

Freezing: Freeze in portioned containers for up to 3 months. Thaw overnight before reheating.

Customize the spice level by adjusting the amount of jalapeño or chili powder.
