Description

This taco soup frios recipe is a hearty, flavorful twist on a classic taco soup. Perfect for any season, it’s packed with protein, vegetables, and bold seasonings, topped with crunchy Fritos or chilled for a refreshing summer meal.

Ingredients

Scale
  • Protein:
    • 1 lb ground beef or turkey (or plant-based meat for a vegetarian option)
  • Vegetables:
    • 1 medium onion, chopped
    • 2 cloves garlic, minced
    • 1 can (10.5 oz) diced tomatoes
    • 1 cup sweet corn (fresh, canned, or frozen)
    • Optional: 1 jalapeño, diced
  • Legumes and Spices:
    • 1 can (15 oz) black beans (or pinto/kidney beans), drained
    • 1 packet taco seasoning (or homemade blend)
    • Optional: ½ tsp chili powder for extra spice
  • Broth:
    • 4 cups chicken, vegetable, or beef broth
  • Optional Toppings:
    • Shredded cheese (cheddar, queso fresco, or your favorite)
    • Sour cream or Greek yogurt
    • Avocado slices
    • Fresh cilantro
    • Fritos or tortilla chips

Instructions

Prep the Ingredients:

Chop the onion and garlic, and prepare all toppings.

Cook the Meat and Aromatics:

Heat a large pot over medium heat. Add the ground beef or turkey and cook until browned. Add onion and garlic, and sauté until fragrant.

Add Spices and Broth:

Stir in taco seasoning and chili powder (optional). Pour in a splash of broth to deglaze the pot, scraping up any browned bits.

Combine Ingredients and Simmer:

Add diced tomatoes, beans, corn, and the remaining broth. Stir well and let the soup simmer for 20–30 minutes, allowing the flavors to meld.

Serve Hot or Chilled:

For the classic version, serve hot with your choice of toppings. For the “frios” variation, let the soup cool and refrigerate for 2–3 hours before serving with fresh, light toppings.

Notes

To thicken the soup, blend a portion of the beans and stir them back into the pot.

Customize the recipe with low-carb ingredients like zucchini or spinach for a keto-friendly version.

For vegan options, skip the cheese and sour cream, and use plant-based protein.
